Brown Sugar Muffins

1 cup brown sugar
1 egg
1/2 cup butter, softened
1 tsp. baking soda dissolved in 1 cup milk
2 cups flour
2 tsp. vanilla
pinch of salt
1/2 cup nuts (optional)

1. Combine brown sugar, egg, and butter, in mixing bowl and beat well.
2. Add soda in milk, flour, vanilla, salt and nuts (if using). Mix well
3. Fill muffin cups 1/2 full and bake at 350℉ for about 20 minutes.
Makes about 1-1/2 dozen muffins
