Sausage Queso for a Crowd





Ingredients

1 lb traditional sausage (I used Jimmy Dean)
1/2 onion, diced 
1 tsp cumin
1 tsp chili powder
1 tsp paprika
Salt and pepper, to taste
1 (8 oz.) block cream cream
1 (15 oz) can Rotel
1 (4 oz) can mild diced green chiles
1 pound (16 oz.)  Monterey Jack cheese either grated or cut/broke into small cubes
Pico de Gallo and cilantro for garnish, optional

Instructions
1. Dice the onion.  Heat a large skillet with a little oil and cook the diced onion until soft.  Add the sausage and cook until fully cooked through and starting to brown.

2. Add the cream cheese and stir until softened and fully combined.  Stir in the seasonings, then add the Hotel and green chilies.  Mix well.

3.  Add the cheese.  

4.  At this point you can:
   * Transfer to a 350 ℉ oven for about 10 minutes (If you are using cast iron)
   *Transfer to a crock pot for about 1 hour, or
   *Finish on the stovetop by covering and cooking over medium-low heat until the cheese is melted.

5. Do not overcook-burnt cheese will not stay smooth and melty. If desired, garnish with cilantro  and pico de Gallo.

3. Serve with tortilla chips*. Refrigerate any leftovers. Serves 10-15 people.

Notes

*The most traditional way to eat this queso is with warm chips! But don't limit your queso possibilities to just chips. There are so many ways to eat this.
Cut up veggies, potato wedges, pretzel bites or just pretzels are all amazing ideas for dipping.
You could also pour the queso on burritos, roasted veggies, taquitos or even mix the leftovers in mac n' cheese!

Storing Leftovers
You can totally store this in the fridge! You'd be amazed at how many things you can top off with some leftover queso.
It lasts in the fridge for 4-5 days.
