1 cup flour
1 TBS baking powder
2 eggs
1 TBS baking powder

1/2 cup cottage cheese (for higher protein)
1/3 cup maple syrup3/4 cup milk
1/2 lb ground breakfast sausage
1 cup shredded cheddar cheese or your favorite kind
Maple syrup for serving, if desired
Instructions:
1. Preheat oven to 375℉. Grease an 8 x 8 inch baking dish. Line with parchment paper (If you want to lift it out of pan for easier cutting).
2. Heat a large skillet, add sausage and cook until browned, breaking into small pieces. Set aside.
3. In a large mixing bowl combine flour, baking powder, eggs, cottage cheese, milk and maple syrup. Mix well, then fold in sausage and cheese.
4. Pour batter into prepared baking dish and spread evenly.
5. Bake for 30-40 minutes, or until slightly browned and a toothpick inserted in center comes out clean. Cut in squares.
