Chunky Peach Salsa


1-1/2 lbs peaches, diced in small pieces (you can use canned diced peaches, drained)
1 lb tomatoes, diced (about 3 large)
1 jalapeno, seeded and finely diced
1 small yellow onion, finely diced
1/2 bunch cilantro, chopped
2 TBS fresh lime juice
1-1/2 tsp salt
1/4 tsp black pepper

1. Place diced peaches, diced tomatoes, diced jalapeƱo, diced onion, and cilantro in a large bowl.  Stir gently to combine.

2.  Squeeze the lime juice over the top and sprinkle with salt and pepper.  Gently stir again to combine.  Cover tightly and refrigerate for at least 2 hours to let flavors blend.  (Would be good if you add diced mango also)

Serve with tortilla chips or Mexican food.
